What is Kofu Chicken Motsuni?
It originated in around 1950. "It was a waste to throw away chicken giblets.
A soba restaurant in Kofu came up with the idea, wondering if there was something cheap and tasty they could make.
Kumquats (eggs still developing inside the chicken's body), gizzards, hearts, and liver are simmered quickly over high heat in a sweet and spicy soy sauce sauce, which coats the chicken organs.
This shine tightly seals in the umami flavor and is the lifeblood of stewed chicken offal!
Nowadays, you can enjoy this dish at various restaurants in Kofu city, including soba restaurants, so please come to Kofu and try the various types of "Kofu Chicken Motsuni"!!

■ Introduction to chicken giblets stew
Kinkan
Kinkan is the name of the egg that develops inside the chicken's body.
The eggs exist inside the chicken's body in the shape of beads, and consist of only yolk, no white, and no shell.It is part of the innards of a chicken that has been slaughtered for meat.
Gizzard
Chickens don't have teeth, so they keep grit in a part of their stomach where it is broken down into smaller pieces.
This part is called the gizzard, also known as the gizzard.
It has a crunchy and chewy texture and is a part that is often used in yakitori.

Hatsu is the heart of a chicken.
Like cows and pigs, the most likely theory is that it is a corruption of the word "hartz."

"Kofu Chicken Offal Stew (Retort)" contains four types of chicken offal (gizzard, heart, liver, and kumquat), and can be enjoyed either cold or heated for its rich flavor.
If using a water bath, heat in boiling water for about 5 minutes, or if using a microwave, transfer to a heat-resistant container, cover with plastic wrap, and heat for about 2 minutes (500W) and it's ready.
